Smoked Duck over Oven Baked Fries with KC BBQ Sauce

Ingredients

Duck Brine

16 cup(s) Water
1 cup(s) Kosher Salt
1 cup(s) Brown Sugar
2 Bay leaves
1 tbsp Whole Peppercorn

KC Dry Rub

1 cup(s) Dark Brown Sugar
2 tbsp Smoked Paprika
1 1/2 tbsp Chili Powder
1 1/2 tbsp Garlic Powder
1 1/2 tbsp Onion Powder
1 1/2 tbsp Black Pepper
1 1/2 tbsp Kosher Salt
1 tsp Cayenne Pepper

Smoked Duck

1 Duck
Wood chips, like Apple wood
Olive Oil Cooking Spray
Kansas City Dry rub ( from above )
Small Yellow Onion, quartered
Fresh Thyme
Fresh Oregano
Butchers Twine

Ketchup

28 oz Crushed Tomatoes
3/4 cup(s) White Vinegar
2 tsp Kosher Salt
1 tsp Onion Powder
1 tsp Garlic Powder
1/4 tsp Black Pepper
1/2 cup(s) White Sugar

BBQ Sauce

2 cup(s) Homemade Ketchup
1 cup(s) Apple Cider Vinegar
1 cup(s) Dark Brown Sugar
1 tbsp Kosher Salt
1 1/2 tbsp Paprika
1 tbsp KC Dry Rub
1/8 cup(s) Molasses
1/2 tsp Hickory Flavored Liquid Smoke
1/4 tbsp Crushed Red Pepper Flakes

Oven Baked Fries

5-6 Russet Potatoes
1-2 tbsp Collected Duck Fat
Black Pepper
Kosher Salt

Gruyère Cheese
Shredded Fiesta Blend Cheese
Green Onions

Instructions

Duck Brine

Step #2 - Heat 4 cups of water in a large saucepan. Adding Salt and Brown Sugar. Allow to reach a boil or until the sugar and salt is dissolved. Turn off heat and pour in another 12 cups of cool water. Allow the brine to cool to room temperature. Submerge the duck, allowing the cavity to fill up with brine solution. Place in refrigerator over night.
Step #3 - Remove the duck from brine. Pat dry with paper towels, then place back in refrigerator for a few hours, allowing the skin to dry.

KC Dry Rub

Step #5 - Combine the ingredients for the dry rub, reserving at least 1 tbsp for BBQ sauce, the rest can be used on the duck.

Smoked Duck

Step #7 - Remove the duck form the fridge, making sure the skin is dry. Spray outside of the duck all over with Olive Oil cooking spray. You can stuff the inside of bird with a small quartered onion and herbs, like thyme and oregano, trussing the legs.
Step #8 - Season outside generously with dry rub.
Step #9 - Soak wood chips for at least 30 minutes before smoking. Place duck on top track with a pan underneath to catch fat dripping.
Step #10 - Set smoker to 250 and cook for 3-4 hours or until the duck reaches an internal temperature of around 150-155. Continue to add to soaked wood to the smoker every 15 to 30 minutes.
Step #11 - Once the duck reaches temp, remove from smoker and allow to rest to 15 minutes.
Step #12 - Remove the pan with the collected duck fat and filter by pouring through strainer lined with paper towels. Be careful handling, grease will be extremely hot.

Ketchup

Step #14 - Combine the ketchup ingredients in a small saucepan and turn heat to medium low. Allow to reach a simmer, then reduce heat. Allow to cook on stove for a few hours, until the ketchup is reduced and thick.

BBQ Sauce

Step #16 - Take your homemade ketchup and add the BBQ sauce ingredients to it. Allow to reach a simmer and reduce heat. Allow to simmer on the stove for another hour, stirring occasionally.

Oven Baked Fries

Step #18 - Preheat oven to 375 degrees. Wash the potatoes, then cut into equal size match stick type fries.
Step #19 - Add cut fries to a bowl filled with cool water. Add 1-2 tablespoons of salt and allow to soak for 30 minutes. Drain the water and refill and allow to soak for another 30 minutes.
Step #20 - Dump fries onto baking sheet lined with paper towels and allow to dry.
Step #21 - Add the dry fries to a bowl and drizzle in 1 to 2 tablespoons of your collected duck fat. Toss the fries so that they are evenly coated. Then dump out on a clean baking sheet and season with salt and pepper.
Step #22 - Place the seasoned fries in the hot oven and cook for 20 minutes. After 20 minutes turn heat up to 425 and cook another 20 minutes. Remove from oven and allow to cool.

Smoked Duck and Fries

Step #24 - Shred the duck meat.
Step #25 - Place some oven baked fries in the bottom of a bowl and top with shredded smoked duck meat. Sprinkle on some of the shredded cheese.
Step #26 - Grate some of the Gruyère cheese over the whole dish.
Step #27 - Add some chopped green onions and drizzle with BBQ sauce.
