Dan Dan Pheasant Noodles
I already had some ground pheasant in the freezer that I was looking for an excuse to use. If you don't have any, you can run some Pheasant Breast through a meat grinder, but doing so is going to add a considerable amount of cleanup time. A shortcut might be using ground chicken or turkey. I also had several containers of Pheasant stock prepared and stored in the freezer. Prepping for this meal basically meant letting these two ingredients defrost on the counter. If you don't have Pheasant stock prepared and don't want to spend hours making it, you can use something like a Pho Broth or Chicken Stock. Everything else I needed for the recipe, I pretty much already had on hand.
Not everything I try to make ends up on Gundog Central and there a few recipes I posted that I'd already like to modify and try again. Don't get me wrong, I enjoyed every meal, I wouldn't have posted it otherwise, but I think I could improve a few of them a little more. I do have my favorites ... this recipe right here is one of them. We've actually made this three times since and there are never any leftovers.

Pheasant Bolognese with Kale and Parmesan
If you read my last recipe post, the one about Smoked Chukar White Lasagna, you'll know that I've been blessed with an abundance of Kale in my little backyard garden this year. This Pheasant Bolognese with Kale and Parmesan recipe, is just another way that I found to deal my little Kale problem. This is just one of several recipes that I've made or have plans to make that will feature my backyard Kale. My little backyard garden is overrun with the stuff and it's growing faster than I can use it. While this recipe might have been posted as a way to deal with my Kale, it's really inspired by a Chicken Bolognese that my wife made a few months ago. She's a pasta freak, she absolutely loves it!! I think I've written about it before in another recipe post. Any way ... my wife made a Bolognese one night after work, she said she wanted to try something different, other than her regular, go to pasta dishes like Pasta Carbonara, Cacio e Pepe and Bucatini Allamatriciana. Let me tell you, it was freaking AMAZING!!! She knocked it out of the park when she made it! It was so freaking good ... I knew I wanted to try something like it for Gundog Central. You'll be disappointed to learn that the recipe I'm posting here, isn't a copy of her recipe!!
Pheasant Cordon Bleu Casserole with Ritz Cracker Crust
One of my all-time favorite meals, in my life, ever, was a Chicken Cordon Bleu casserole that my wife had made for dinner one night. I can't tell you way it was so good, maybe I was just super hungry that night or maybe the stars were aligned just right ... but I remember that meal distinctly and how amazing I thought it was ... and how I wished she'd make it again. It was salty, it was savior, it was cheesy and that crushed, buttery, Ritz crackers crust, MMMmmmm!! I could have eaten the whole thing, by myself and not felt guilty, had my wife not reminded me that we had kids at home that needed to eat too!! It was pretty much a whole meal unto itself, nothing else was needed ... and that pretty much defines what a Casserole is, a one pot dish.
Pheasant Gumbo with Brown Rice Pilaf
I'm not Cajun, nor was I born and bred on the bayou ... I did spend a fair amount of my adult life living on it though. My dad was in the Air Force, so we traveled around quite a bit. The last place we were stationed, was Barksdale Air Force in Louisiana, it's in the northern part of the state, close to Shreveport and Bossier City. I remember the day he came home and told the family we were moving to Louisiana, we were Stationed in Missouri at Whiteman Air Force base at the time and I was half way through my sophomore year at Knob Noster High School. Even being in High School and having studied all 50 states since middle school, I couldn't for the life of me picture where Louisiana was even at, I had to look it up on a map. I didn't want to go, I dreaded the thought of moving and I hated it before we even got there. I didn't like it any better when we finally got there either, to me it was just plain, old, Lousy-ana. I end up graduating at Haughton High School in Louisiana and then attended Bossier Parrish Community College and LSU, ever so briefly ( my grades were dreadful ). Dad ended up retiring down there and it felt like the family was going to be trapped there for the rest of our lives.
