Jalapeno Duck Popper Casserole

Everyone seems to have their own version of a Jalapeno Popper recipe that they like to use, I thought I'd add a little twist to this version by doing it as a Casserole. This isn't an original ideal of mine, you can find hundreds of popper casseroles recipes all over the internet, this is just my take on one. Not only was this recipe delicious, but it was quick and easy!! As long as you don't count the time it took to cook the duck breast. I know a casserole is supposed to be a one pot dish, but if you add the duck breast to a slow cooker before leaving for work in the morning or at lunch time, they'll be done by the time you get home from work. At that point you can just shred the meat and start assembling this casserole. I have to be honest, I ate half of this by myself, it was so good! We had just enough left to snack on the next day, but it only left me wanting more. We will definitely be making this again.


 

Ingredients


  2 Duck Breast
  8 oz Cream Cheese
  2 tbsp Butter, unsalted
  1/2 cup(s) Milk
  2 Jalapenos, diced
  2 Strips of Bacon
  1 cup(s) Shredded Cheese, like Colby Jack or Cheddar
   Ground Black Pepper
   Garlic Salt
   Salt


Instructions

Step #1 Season duck breast generously with salt and pepper on both sides.



Step #2 Add duck breast, skin side down to slow cooker. Set heat to low and cook 4-6 six hours until fork tender and shreds easily, flip the breast over after 1 hour and allow to cook in its own fat.




Step #3 Once done, allow to cool and shredded with a pair of forks.



Step #4 Preheat oven to 375. Added shredded duck breast to bottom of a casserole dish. Sprinkle in some salt and pepper, then drizzle it with a little of the rendered duck fat from the bottom of the slow cooker



Step #5 Melt cream cheese in saucepan with 2 tbsp of butter. When soft add 1/2 cup of milk, stirring to combine. Sprinkle in a dash of salt.



Step #6 Pour cream cheese mixture over top of shredded duck breast




Step #7 Dice up two jalapeño peppers and sprinkle them over top of cream cheese mixture



Step #8 Add 1 cup shredded cheese, like Sharp Cheddar or Colby jack. Sprinkle in a little more salt and pepper



Step #9 Render down two strips of bacon, when down remove to plate lined with paper towel.



Step #10 Chop the bacon up into small pieces




Step #11 Sprinkle bacon bits over top of casserole.



Step #12 Sprinkle in a little more salt and pepper, then
a little garlic salt



Step #13 Cook for 20 minutes



Step #14 Remove from oven with cheese is melted and starts to brown.




Step #15 Serve hot!!

You may think cooking and recipes don’t have much to do with a website dedicated to hunting dogs ... but really, why do we hunt?
