Dan Dan Pheasant Noodles

My morning routine usually involves a hot cup of coffee and me trying to clear the sleep out of my eyes enough to be able to read the morning news. On one particular morning, I was drinking my coffee and scrolling through the news on my phone when I saw a recipe for Dan-Dan Noodles. I'm not really a big Asian food, but when I saw the picture I knew immediately that I wanted to make something similar to it. I spent the rest of my day trying to figure out how I could do this with the ingredients I had at home. This version isn't going to be authentic, I'm not using any pork or Sichuan peppers, but it still turned out pretty good.

I already had some ground pheasant in the freezer that I was looking for an excuse to use. If you don't have any, you can run some Pheasant Breast through a meat grinder, but doing so is going to add a considerable amount of cleanup time. A shortcut might be using ground chicken or turkey. I also had several containers of Pheasant stock prepared and stored in the freezer. Prepping for this meal basically meant letting these two ingredients defrost on the counter. If you don't have Pheasant stock prepared and don't want to spend hours making it, you can use something like a Pho Broth or Chicken Stock. Everything else I needed for the recipe, I pretty much already had on hand.

Not everything I try to make ends up on Gundog Central and there a few recipes I posted that I'd already like to modify and try again. Don't get me wrong, I enjoyed every meal, I wouldn't have posted it otherwise, but I think I could improve a few of them a little more. I do have my favorites ... this recipe right here is one of them. We've actually made this three times since and there are never any leftovers.


 

Ingredients



Heat Infused Seasame Oil


  3 clove(s) Garlic
  1/2 cup(s) Seasame Oil
  1 tbsp Crushed Red Pepper
  1/4 tbsp White Sesame Seeds
  1/4 tbsp Chinese Five Spice

Dan Dan Sauce


  1/2 cup(s) Soy Sauce
  1/4 cup(s) Hoisin Sauce
  2 tbsp Rice Wine Vinegar
  4 tbsp Tahini ( or 2 tbsp of peanut butter )
  1 tbsp Honey
  1 tbsp Mirin
  1/4 tbsp Chinese Five Spice

Dan Dan Noodles


  14 oz Thai Rice Noodles
  8 cup(s) Pheasant Stock
  2.5 oz Baby Spinach
  8 oz Baby Bella or White Mushrooms, chopped
  1 lbs Ground Pheasant meat
  6 Green Onions, white and light green parts chopped
  1 Small Shallots, Diced
   Black Pepper
   Salt


Instructions


Heat Infused Sesame Oil


Step #1 Add Sesame Oil to saucepan and set the heat on medium.




Step #2 While Sesame Oil is heating up, chopped your garlic into thin strips.



Step #3 Added sliced Garlic, Crushed Red Pepper and Chinese Five Spice to Sesame Oil.



Step #4 Add in white sesame seeds.



Step #5 Stir all the ingredients together and allow to reach a boil.




Step #6 Turn off heat and drain mixture into a small bowl. This will make more then you need for this recipe. Save it, Store it, because you'll want to make this recipe again.




Dan-Dan Sauce


Step #1 Combine Soy Sauce, Hoisin Sauce, Rice Wine Vinegar, Honey, Mirin, Tahini and Chinese Five Spice, in a small bowl, using a whisk to combine




Dan Dan Noodles


Step #1 Prepare your ingredients for this dish by chopping Spinach



Step #2 Chopping Green Onions



Step #3 Chop the mushrooms



Step #4 And dicing Shallot




Step #5 Add 3 tbsp of the hot sesame oil to a skillet and set heat to medium high. Add Ground Pheasant



Step #6 Add a sprinkle of salt and pepper. Brown meat for 5 to 7 minutes.



Step #7 Add mushrooms and shallot and cook an additional 5 minutes



Step #8 Cooking until mushrooms are soft, or for even more flavor, cook until mushrooms start to brown.




Step #9 Add 3/4 cup of Dan-Dan Sauce mixture, stirring to combine



Step #10 And cook another 3-5 minutes



Step #11 Add 2 tbsp season sesame oil, turn off heat and side aside.



Step #12 Bring 8-12 cups of water to a boil in large stock pot. Add 2 handfuls of salt to the water. When boiling, add noodles and cook 4 to 6 minutes.




Step #13 While noodles are cooking, add pheasant stock to another sauce pot. Set heat to medium and allow to warm



Step #14 Add the rest of soy sauce mixture and spinach to sauce pot. Allow to reach a simmer then turn off heat



Step #15 Drain noodles and add to each serving bowl.



Step #16 Add a few spoonfuls of seasoned Pheasant broth to each serving bowl, enough to nearly submerge the noodles. Spoon in a few spoonfuls of Pheasant meat mixture. Sprinkle on Green Onions. Sprinkle with salt and pepper
