Every year my wife and I try to cook a themed meal for the Super Bowl. Most of the time will look at the teams involved and try to use food both cities are known for, then try to fuse them together. This year it was the Philadelphia Eagles and the Kansas City Chiefs playing against each other. Since I used to live around KC, I was pulling for the Chiefs this year, but thought the Eagles were probably the stronger team. I decided to do this Smoked Duck with Duck Fat French Fries drizzled with a Kansas City style bar-b-que sauce. While the Smoked Duck doesn’t really have anything to do with Philadelphia, the bird is supposed to represent an Eagle, or a smoked eagle in this case. This just symbolic since the team’s mascot is a bird.

There is a local BBQ restaurant here that sells something called `Piggy Fries`. It’s basically wedge potatoes with BBQ pork served over top of them with cheese, BBQ sauce and green onions. Probably not the healthiest of meals, but it’s really good, I’ve eaten it a few times. I wanted to try to recreate that meal and this is my attempt using Smoke Duck, instead of pork.

My BBQ sauce turned out strong and spicey, which I liked, but a little bit goes a long way. With this recipe, you can save a ton of time by buying BBQ sauce and using frozen fries. Otherwise, if you want to try your own BBQ, be prepared to simmer it for a few hours, until you get the consistency that you want. Mine cooked on the stove for 3-4 hours on low heat, I had to stir it occasionally to keep bottom from burning and sticking to the saucepan.

These oven baked duck fat fries turned out super delicious, but if you wanted to up your French Fry game a little more, you might consider tossing them in some additional seasoning once they are done cooking. I used russet potatoes, which are the best for French fries, but you can try what you have on hand. While I oven baked mine, you can also air fry them if you have the equipment.

Instructions

Duck Brine

Step #1 Heat 4 cups of water in a large saucepan. Adding Salt and Brown Sugar. Allow to reach a boil or until the sugar and salt is dissolved. Turn off heat and pour in another 12 cups of cool water. Allow the brine to cool to room temperature. Submerge the duck, allowing the cavity to fill up with brine solution. Place in refrigerator over night.

Step #2 Remove the duck from brine. Pat dry with paper towels, then place back in refrigerator for a few hours, allowing the skin to dry.

KC Dry Rub

Step #1 Combine the ingredients for the dry rub, reserving at least 1 tbsp for BBQ sauce, the rest can be used on the duck.

Smoked Duck

Step #1 Remove the duck form the fridge, making sure the skin is dry. Spray outside of the duck all over with Olive Oil cooking spray. You can stuff the inside of bird with a small quartered onion and herbs, like thyme and oregano, trussing the legs.

Step #2 Season outside generously with dry rub.

Step #3 Soak wood chips for at least 30 minutes before smoking. Place duck on top track with a pan underneath to catch fat dripping.

Step #4 Set smoker to 250 and cook for 3-4 hours or until the duck reaches an internal temperature of around 150-155. Continue to add to soaked wood to the smoker every 15 to 30 minutes.

Step #5 Once the duck reaches temp, remove from smoker and allow to rest to 15 minutes.

Step #6 Remove the pan with the collected duck fat and filter by pouring through strainer lined with paper towels. Be careful handling, grease will be extremely hot.

Ketchup

Step #1 Combine the ketchup ingredients in a small saucepan and turn heat to medium low. Allow to reach a simmer, then reduce heat. Allow to cook on stove for a few hours, until the ketchup is reduced and thick.

BBQ Sauce

Step #1 Take your homemade ketchup and add the BBQ sauce ingredients to it. Allow to reach a simmer and reduce heat. Allow to simmer on the stove for another hour, stirring occasionally.

Oven Baked Fries

Step #1 Preheat oven to 375 degrees. Wash the potatoes, then cut into equal size match stick type fries.

Step #2 Add cut fries to a bowl filled with cool water. Add 1-2 tablespoons of salt and allow to soak for 30 minutes. Drain the water and refill and allow to soak for another 30 minutes.

Step #3 Dump fries onto baking sheet lined with paper towels and allow to dry.

Step #4 Add the dry fries to a bowl and drizzle in 1 to 2 tablespoons of your collected duck fat. Toss the fries so that they are evenly coated. Then dump out on a clean baking sheet and season with salt and pepper.

Step #5 Place the seasoned fries in the hot oven and cook for 20 minutes. After 20 minutes turn heat up to 425 and cook another 20 minutes. Remove from oven and allow to cool.

Smoked Duck and Fries

Step #1 Shred the duck meat.

Step #2 Place some oven baked fries in the bottom of a bowl and top with shredded smoked duck meat. Sprinkle on some of the shredded cheese.

Step #3 Grate some of the Gruyère cheese over the whole dish.

You may think cooking and recipes don’t have much to do with a website dedicated to hunting dogs ... but really, why do we hunt? Sure, we enjoy watching our dogs work in the field and being outdoors, but ultimately, hunting is about survival and feeding our families. We might as well try to do it well. I'm not a chef and definitely no food authority ... but I do like to eat and enjoy cooking. After searching for people willing to share their recipes on Gundog Central, without much success, I decided to try to do a few on my own, with my wife Tami's help. The recipes I share here are things I like to eat and have made here at home. I've tried to include step-by-step instructions with each meal describing exactly how I did it, but my method may not be best, if you decide to try a recipe posted here, please use whatever technique you think works best, I'm simply sharing how I did it. You'll see a lot of recipes where I've tried to make things from starch, when I could have just used store bought ingredients, simply because I wanted to learn how something was done. My goal is to continually update these recipes as I learn new things and techniques. These are my attempts at creating good, home cooked food, that I would like to eat! If I'm sharing it here, my family and I enjoyed it and I believe you will too.
